In a region that mostly sells sweetness, Silvano Follador farms a tiny biodynamic estate in the steep Cartizze heartland of Valdobbiadene and lets the Glera stand naked. The must ferments slowly, then rests six months on fine lees in cement, which builds texture where sugar usually does the work. What is left is taut, chalky and mineral, a sparkling wine you drink for its cut rather than its charm. If
